Food


We've been eating gluten-free (mainly eating grain-free, but that's a bit more challenging)
I love to bake, so thank goodness for all the grain-free and gluten-free recipes out there!

This first one is for Banana Bread. I made mine into little muffins...just gotta be different!!



I found a recipe online, but true to myself,
 I had to tweaked it.  They came out great!!

Here's my version, 
which I must stay were soooo yummy!

What you'll need:

2 cups gluten-free flour
1 tsp baking powder
1/2 tsp salt
1/2 cup butter (NO MARGARINE...YUCK!)
1/2 cup coconut sugar
2 eggs, slightly beaten
3 tbsp maple syrup
1/2 apple sauce
3 lg ripe bananas 

And here's what you'll do:

Preheat oven to 350 degrees.

In a large bowl, cream the butter and sugar together.  Add in the beaten eggs, maple syrup, apple sauce, and mashed up bananas.  Next, add the flour, baking powder and salt.  Mix just to combine.

You can bake in a greased loaf pan, for about 30-35 minutes or until toothpick comes out clean, or in a muffin pan, baking regular size muffins for about 18 minutes, or mini-muffins for 12 minutes.  
This recipe made 9 regular and 20 minis.   

Be creative!  Add chopped walnuts or dark chocolate chips!



The aroma of autumn drifting through the house...it's something so wonderful.

This gem of an apple pie was grain-free!  

I followed the recipe for the crust in Danielle Walker's book, Against All Grain. (I again tweaked the process, 
but added all her ingredients)
I had not made a grain-free crust yet, so I really wasn't sure what to expect.  
To work with, it was a bit tricky, it not wanting to stick real well together like regular flour dough.
You'll definitely want to roll it out on parchment paper!!  Makes rolling and transferring to the pie plate so much easier.


FOR THE CRUST

Ingredients:

5 cups blanched almond flour
2 tbsp coconut flour
2 lg cold egg
10 tsp ice water
1 1/2 tsp sea salt
7 tbsp palm shortening


The "How To":

Preheat oven to 350 degrees

Place the first 5 ingredients in food processor and process 30 seconds.  *I didn't use the food processor, but did this by hand in a bowl and it worked fine.  Then add the shortening in small spoonfuls.  Mix gingerly so it just comes together.

Divide dough in half.  Roll out on parchment paper into a circle larger than your pie plate and carefully transfer it to the plate.  Roll out remaining dough to cover your apples, or whatever yummy pie you're making.  After the pie is filled and covered, carefully pinch the edges together and cut a few air vents in the top.

Bake for approx. 35-40 minutes or until the fruit inside can be pieced easily with a fork. 


For Apple Pie:

Thinly slice 8 peeled apples, place in a bowl, add 1/2 cup sugar, 2 tsp cinnamon, 1/2 tsp salt. 
Mix and place in bottom of pie crust, cover, seal edges and bake as directed above.
